Oyster Mushroom ‘Chicharrones’
A very simple recipe, and truly delicious! Pull apart mushroom caps and coat liberally with olive oil or coconut oil. Season with salt (and pepper and thyme if you like). Spread on cookie sheet so the mushrooms are not touching. Bake at 425 deg. for 30-45min. Let cool before devouring. **Note: results will vary greatly with the type of oven you use. Convection ovens work best, removing moisture and leaving a nice crisp mushroom.
